FERMISTART
is a product selected and approved by the LIEC entity, with a specific
application for the treatment of the alcoholic fermentation stops.
FERMISTART
is a complex product composed by a mixture of yeasts barks, inert yeasts and cellulose,
designed not only for doing a corrective treatment in the case of important stop
or deceleration of the fermentation, but also for being used as a farsighted element
of them.
Because of its specific composition, FERMISTART contributes
to the element with growth and survival factors of yeasts such as ergosterol and
long chain fatty acids, it works as adsorbent of the toxins generated by the yeast
itself when it executes an anomalous metabolism (mean chain acids), and of others
that can be caused by the vintage (residues of plant protection products), and,
moreover, it provides a physical medium for the development of the yeasts .
Use
conditions
The recommended guiding dose for preventing
actions ranges from 10 to 15 g/Hl in two moments: At the beginning of the fermentation
and once the tumultuous fermentation has finished. On the other side, for decelerations
or fermentation stops, 20 to 40 g/Hl must be added. The total added quantity must
not exceed 40 g/Hl.
Way of preparation: Once it has been
defined the necessary quantity, immerse the product, depending on the case, in
must or must under fermenting process that is the object of the correction, in
an approximated proportion of 1/10.
Addition: Add
the previous suspension to the whole warranting homogenization and aeration, in
the case of red vintage coinciding with a pumping over. For the reactivation of
the alcoholic fermentation it is advisable to follow the Central Enológica M.,
Ltd. internal work instruction.
